Ingredients

✅ 2½ cups Tater Tot Crowns
✅ 1 tbsp extra-virgin olive oil
✅ 1 lb Italian or breakfast sausage
✅ 8 scrambled eggs (seasoned with salt & butter)
✅ 1½ cups shredded Cheddar cheese
✅ 2 scallions, diced
✅ 8 large (10-inch) flour tortillas


Instructions

1️⃣ Preheat oven to 400°F and lightly coat a baking sheet with nonstick spray.
2️⃣ Cook tater tots according to package instructions.
3️⃣ In a skillet, heat olive oil over medium-high heat. Add sausage, breaking it into crumbles, and cook until fully browned. Drain excess fat and transfer to a bowl.
4️⃣ Scramble eggs in the same skillet until soft and fluffy.
5️⃣ Assemble each burrito by layering sausage, 5-6 tater tots, scrambled eggs, cheese, and scallions down the center of each tortilla.
6️⃣ Fold & roll burritos tightly, placing them seam-side down on the baking sheet.
7️⃣ Bake for 12-15 minutes, let cool for 2-3 minutes, and enjoy!

  • Assemble burritos and let all ingredients cool to room temp.
