Ingredients

✔ 2 cups all-purpose flour
✔ 1 tsp baking soda
✔ ¼ tsp salt
✔ ½ cup butter, softened
✔ 1 cup sugar
✔ 1 large egg
✔ 2 tbsp fresh lemon juice (double for a stronger lemon flavor!)
✔ 1 tsp lemon zest
✔ ½ tsp vanilla extract
✔ 5-8 drops yellow food coloring (optional)

For Rolling

✔ ¼ cup granulated sugar
✔ ¾ cup powdered sugar


Instructions

1️⃣ Mix the dry ingredients: In a bowl, whisk together flour, baking soda, and salt. Set aside.
2️⃣ Cream the butter & sugar: In a stand mixer, beat butter and sugar until fluffy. Add egg, lemon juice, lemon zest, vanilla, and food coloring (if using). Mix well.
3️⃣ Combine: Slowly add the dry ingredients to the wet mixture and mix until just combined. Cover and chill dough for 2 hours.
4️⃣ Preheat oven to 350°F (175°C) and line 2 baking sheets with parchment paper.
5️⃣ Shape the cookies: Scoop out dough, roll into small balls, then roll first in granulated sugar, then in powdered sugar to coat generously.
6️⃣ Bake for 10-12 minutes. Let cool on the baking sheet for 5 minutes, then transfer to a rack.

Notes

🍋 Want extra lemon flavor? Add lemon extract instead of more juice to prevent over-spreading.
🧊 Chill the dough for at least 2 hours—this helps keep them thick and chewy!
🍪 Store in an airtight container to keep them soft.
