Ingredients

8 oz short pasta (fusilli, penne, or farfalle)
1 cup cherry tomatoes, halved
1 cup arugula or baby spinach
1/4 red onion, thinly sliced
Zest and juice of 1 lemon
2 tbsp olive oil
Salt and black pepper to taste
1 ball fresh burrata cheese
Optional: fresh basil leaves
Instructions
Cook pasta according to package instructions. Drain and let cool slightly.
In a large bowl, toss pasta with olive oil, lemon zest, lemon juice, salt, and pepper.
Add cherry tomatoes, arugula, and red onion. Mix gently.
Tear burrata over the top just before serving.
Garnish with fresh basil if desired and enjoy chilled or at room temperature.
