Keto Chicken Alfredo Casserole

For the Alfredo Sauce:

  • 1/2 stick (56g) butter
  • 3/4 cup heavy whipping cream
  • 2 oz cream cheese
  • 1/4 tsp minced garlic
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1/2 cup grated parmesan cheese

For the Casserole:

  • 5 cups cooked chicken breast, cubed
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

 

Instructions

Make the Alfredo Sauce:

  1. Add butter, heavy whipping cream, and cream cheese to a pan over medium heat. Whisk until melted and combined.
  2. Stir in minced garlic, garlic powder, Italian seasoning, salt, and pepper. Whisk until smooth.
  3. Add parmesan cheese and bring the sauce to a simmer. Cook for 3-5 minutes, then remove from heat.

Assemble the Casserole:

  1. Preheat oven to 350°F.
  2. In a 7″x11″ casserole dish, spread 5 cups of cubed chicken breast evenly.
  3. Pour the Alfredo sauce over the chicken.
  4. Layer toppings in this order: shredded mozzarella and grated parmesan cheese.
  5. Bake on the center rack for 25 minutes.
  6. Serve hot and enjoy a guilt-free, cheesy indulgence!

Use rotisserie chicken for a quick and flavorful shortcut.
