Ingredients
For the Cookies:
✔️ 1½ cups + 2 tbsp all-purpose flour (200g)
✔️ 3¼ tbsp granulated sugar
✔️ 1 tsp baking powder
✔️ 1 pinch salt (or ¼ tsp if using unsalted butter)
✔️ Zest of 1 lemon
✔️ 1 large egg
✔️ ¼ cup butter (melted & cooled)
✔️ 4 tbsp milk (I use 2%)
For the Lemon Glaze:
✔️ 1½ – 2 cups powdered sugar
✔️ 1 tbsp lemon juice
✔️ 1 tbsp milk (adjust as needed)
Instructions
1️⃣ Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
2️⃣ Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, salt, and lemon zest.
3️⃣ Form Dough: Make a well in the center and add egg, butter, and milk. Mix with a fork, then knead on a flat surface until smooth.
4️⃣ Shape Cookies: Roll dough into 5-6 inch ropes, then twist into knots or circles.
5️⃣ Bake: Place cookies on the baking sheet and bake for 15-18 minutes (or until lightly golden).
6️⃣ Cool & Glaze: Let cookies cool. Mix powdered sugar, lemon juice, and milk to your desired thickness. Dip or drizzle over cookies!
