Italian Dressing Pasta Salad

1 recipe homemade Italian Dressing

1 lb. rotini pasta

3.54 oz. pepperoni, quartered (about ¾ cup)

4 oz. sliced salami, quartered (about ¾ cup)

1 pint cherry tomatoes, halved

1 cup black olives, halved

1 orange bell pepper, chopped

1 green bell pepper, chopped

½ cup finely diced red onion

2 tbsp chopped pepperoncini

8 oz. fresh mozzarella pearls

Parmesan & parsley for garnish


Instructions

Make the Italian Dressing and refrigerate until ready.

Cook pasta in salted water as directed. Drain and transfer to a large bowl.

Toss warm pasta with half the dressing.

Add all remaining ingredients and gently combine.

Chill for at least 30 minutes (or up to 24 hours).

Toss with the rest of the dressing before serving. Garnish with parsley and Parmesan.
