Ingredients
• 1 can (15 oz) chickpeas, drained and rinsed
• 1 can (15 oz) kidney beans, drained and rinsed
• 1 can (15 oz) green beans, drained
• ½ red onion, thinly sliced
• ¼ cup chopped fresh parsley
For the Dressing
• 3 tbsp olive oil
• 2 tbsp Dijon mustard
• 1 tbsp honey
• 1 tbsp apple cider vinegar
• Salt & pepper to taste
Instructions
Make the Dressing – In a small bowl, whisk together olive oil, mustard, honey, vinegar, salt, and pepper.
Mix the Salad – In a large bowl, combine all the beans, red onion, and parsley. Pour dressing over and toss well.
Chill & Serve – Let it sit in the fridge for 20–30 minutes to soak in the flavors.
