  • 1 tablespoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon paprika

For the Honey Lemon Pepper Sauce:

  • ½ cup honey
  • Zest of 1 lemon
  • ¼ cup lemon juice (or more, to taste)
  • 1 tablespoon minced garlic
  • 1 tablespoon butter
  • 12 teaspoons ground pepper (adjust to taste)
  • 1 pinch salt

Instructions

1️⃣ Prep the Chicken Wings:

  1. Preheat your oven to 450°F (232°C).
  2. Pat the chicken wings dry with a paper towel to remove any moisture.

2️⃣ Season the Wings:

  1. In a large bowl, toss the chicken wings with potato starch, baking powder, garlic powder, onion powder, and paprika until evenly coated.

3️⃣ Bake the Wings:

  1. Line a sheet pan with parchment paper and lightly spray with oil.
  2. Arrange the wings in a single layer on the sheet pan. Spray the tops of the wings lightly with oil.
  3. Reduce the oven temperature to 425°F (218°C). Bake for 35-40 minutes, flipping halfway through and spraying the tops with a bit more oil to ensure crispiness.

4️⃣ Make the Honey Lemon Pepper Sauce:

  1. While the wings are baking, heat a small saucepan over medium heat.
  2. Add the honey, lemon juice, lemon zest, minced garlic, butter, salt, and pepper.
  3. Stir the mixture and let it simmer for 3-5 minutes until well combined. (Optional: Set aside a small portion as a dipping sauce.)

5️⃣ Toss the Wings:

  1. Once the wings are fully cooked and crispy, transfer them to a large bowl.
  2. Pour the honey lemon pepper sauce over the wings and toss until fully coated.

6️⃣ Serve and Enjoy:

  1. Serve hot, garnished with extra lemon zest or a sprinkle of parsley for a fresh touch. Pair with your favorite sides or enjoy them on their own!

Notes

  • For extra crispiness: Use a wire rack on the baking sheet to allow better air circulation under the wings.
  • Spice it up: Add a pinch of red pepper flakes to the sauce for a touch of heat.
  • Alternative starch: Cornstarch can be used if potato starch isn’t available.
  • Air fryer method: Cook the wings at 400°F (204°C) for 20-25 minutes, flipping halfway through.
