Ingredients
For the Chicken:
1 lb boneless, skinless chicken thighs or breasts, cubed
2 tablespoons harissa paste
1 tablespoon honey
1 tablespoon olive oil
2 cloves garlic, minced
Salt & pepper to taste
For the Bowls:
2 cups cooked rice or couscous
1 cup chopped cucumber
1/2 cup cherry tomatoes, halved
1/4 cup crumbled feta
1/4 cup chopped fresh parsley
Lemon wedges for serving
Instructions
In a bowl, mix harissa, honey, olive oil, garlic, salt, and pepper.
Toss chicken with the mixture and let marinate (10 mins or overnight).
Sauté chicken in a skillet over medium-high heat until golden and cooked through (about 7-10 minutes).
Assemble bowls: rice or couscous as base, then top with chicken, cucumber, tomatoes, feta, and parsley.
Finish with a squeeze of lemon juice.
