Ingredients

For the Beef:

  • 3 lb boneless chuck roast
  • 2 tbsp vegetable oil
  • ½ cup honey
  • 2 chipotle peppers in adobo, minced (use 1 for less spice)
  • 4 tbsp chipotle in adobo sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 2 ½ tsp kosher salt (adjust based on roast size)
  • 1 tsp black pepper
  • 1 cup low-sodium beef broth

For the Pickled Onions:

  • 1 small red onion, thinly sliced
  • 1 cup apple cider vinegar
  • 3 tbsp sugar
  • Pinch of kosher salt & red pepper flakes

For the Avocado Lime Sauce:

  • 2 ripe avocados
  • ½ cup water
  • ½ cup olive oil
  • 1 cup cilantro
  • Juice of 2 limes
  • 1 garlic clove
  • ¾ tsp kosher salt

Instructions

1. Slow Cook the Beef

  • Heat oil in a skillet over medium-high heat and sear chuck roast on both sides.
  • In a slow cooker, mix honey, chipotle peppers, adobo sauce, garlic powder, onion powder, cumin, salt, and pepper.
  • Place roast in the slow cooker, turning to coat. Pour in beef broth.
  • Cover and cook on LOW for 8-9 hours until fork-tender.
  • Shred the beef and mix it with the juices. Squeeze fresh lime juice over the meat and sprinkle with cilantro.

2. Make the Pickled Onions

  • Place sliced onions in a mason jar.
  • In a small pan, bring apple cider vinegar to a boil, then stir in sugar, salt, and red pepper flakes.
  • Pour the hot vinegar over the onions. Let cool before covering and refrigerating.

3. Make the Avocado Lime Sauce

  • Blend all ingredients in a food processor until smooth. Adjust seasoning to taste.

4. Assemble the Tacos

  • Warm tortillas (or fry them for extra crunch).
  • Fill with shredded beef, top with pickled onions, avocado sauce, and queso fresco if desired.
