Ingredients
Mascarpone Cream:
✔️ 2 egg yolks
✔️ 1 tbsp sugar
✔️ 1/2 tsp vanilla extract
✔️ Few drops of almond extract
✔️ 2/3 cup heavy whipping cream
✔️ 1 tbsp sugar
✔️ Pinch of salt
✔️ 4 oz mascarpone cheese (cold)
Strawberry Jam & Syrup:
✔️ 1 cup diced strawberries
✔️ 1/4 cup sugar
✔️ 1/4 cup water
✔️ Squeeze of lemon juice
Extras:
✔️ Ladyfingers
✔️ Freeze-dried strawberry powder (for dusting)
Instructions
1️⃣ Make the Mascarpone Cream
🔸 In a double boiler, whisk together egg yolks and sugar over a pot of simmering water for about 5 minutes (until fluffy and reaches 160°F). Remove from heat.
🔸 In a separate bowl, whip heavy cream, sugar, and salt until fluffy. Chill.
🔸 Once egg mixture is slightly cooled, add vanilla & almond extract, then whip until light.
🔸 Gently fold in mascarpone cheese until smooth (avoid overmixing).
🔸 Fold in whipped cream, taste, and adjust sugar/salt if needed. Refrigerate.
2️⃣ Make the Strawberry Jam & Syrup
🔸 In a saucepan over medium heat, combine strawberries, sugar, water, and lemon juice. Simmer for 15 minutes.
🔸 Taste and adjust sweetness as needed.
🔸 Strain the syrup (set aside for soaking ladyfingers) and continue cooking the berries until thick and jammy.
3️⃣ Assemble the Tiramisu
📌 Make sure everything is completely cooled!
✅ Layering order (top to bottom):
- Freeze-dried strawberry powder
- Mascarpone cream
- Strawberry syrup-soaked ladyfingers
- Strawberry jam
- Mascarpone cream
- Strawberry jam
- More soaked ladyfingers
🔸 Cover and chill for at least 4 hours (preferably overnight) for the flavors to meld!
