Ingredients

🍗 1 lb (400g) chicken breast, chopped
🧆 1 cup canned chickpeas, rinsed & drained
🧄 2 garlic cloves, minced
🫒 1 tbsp olive oil
🍋 1 tbsp lemon juice
🧅 2 scallions, chopped
🌿 2 tbsp parsley, chopped
🌶️ 1 tsp crushed red pepper/chili flakes
🖤 1 tsp black pepper
🧂 Salt to taste


Instructions

1️⃣ Heat olive oil in a non-stick pan over medium-high heat. Add chicken, red pepper, black pepper, and salt, stirring until coated. Cover and cook for 3-4 minutes until the chicken is no longer pink.
2️⃣ Add chickpeas and stir for 3-4 minutes. Then mix in garlic and cook for another 1-2 minutes.
3️⃣ Stir in chopped scallions and cook for 2 more minutes until the chicken is fully done.
4️⃣ Remove from heat and finish with fresh lemon juice and parsley.
5️⃣ Serve with hummus, tzatziki, or a fresh tomato cucumber salad for a perfect meal!
