Ingredients
Tinga Sauce:
✅ 1 ½ cups salsa
✅ 1 chipotle pepper
✅ ½ tbsp adobo sauce
✅ ½ tsp salt
✅ ½ tsp cumin
✅ ½ tsp Mexican oregano
✅ 1 tbsp olive oil
Chicken:
✅ 1 ½ cups cooked, shredded chicken
Tostadas:
✅ 8 corn tortillas
✅ 1 can refried beans
✅ Oil (for brushing tortillas)
✅ 2 avocados
✅ 1 lime, juiced
✅ Salt
Toppings:
✅ Fresh salsa
✅ Shredded lettuce
✅ Shredded cheese or crumbled queso fresco
Instructions
1️⃣ Bake the tortillas: Preheat oven to 400°F. Brush tortillas lightly with oil, sprinkle with salt, and bake for 10-16 minutes, flipping every 5 minutes until crispy.
2️⃣ Make the tinga sauce: Blend all sauce ingredients, then heat with shredded chicken in a saucepan over medium-low heat.
3️⃣ Heat the beans: Microwave refried beans until warm and stir well.
4️⃣ Prepare guacamole: Mash avocados with lime juice and salt to taste.
5️⃣ Assemble tostadas:
- Spread 1-2 tbsp refried beans on each tostada.
- Add ⅓ cup tinga chicken.
- Sprinkle with lettuce and cheese.
- Add 2 tbsp guacamole.
- Finish with a spoonful of fresh salsa.
