These crispy baked tacos are filled with seasoned ground beef, lots of melty cheese, and baked to perfection! A quick & easy dinner that’s great for family meals or parties—and they’re freezer-friendly too! 😍

Ingredients

🥩 1 lb ground beef
🧂 1 tsp salt
½ tsp black pepper
🌶️ 2 tsp chili powder
🧄 1 tsp garlic powder
🌿 ¼ tsp smoked paprika
🥄 1 tsp cumin
🔥 ⅛ tsp cayenne pepper (optional, for heat)
🍅 2 tbsp tomato paste
💦 1 tbsp water
🧀 3 cups shredded Mexican cheese blend
🌮 12 street taco-size white corn tortillas (about 5.5” in diameter)

Instructions

1️⃣ Preheat Oven

  • Set oven to 425°F (220°C).

2️⃣ Prepare the Spice Blend

  • In a small bowl, mix salt, black pepper, chili powder, garlic powder, smoked paprika, cumin, and cayenne.
  • In another bowl, mix tomato paste and water.

3️⃣ Cook the Ground Beef

  • Heat a frying pan over medium heat and add ground beef.
  • Cook for 5 minutes, breaking it into crumbles.
  • Reduce heat to medium-low and stir in the spice mix and tomato paste mixture.
  • Cook for 2-3 more minutes until fully combined.

4️⃣ Assemble the Tacos

  • Line a baking sheet with parchment paper.
  • Place 6 tortillas on the sheet and sprinkle with cheese.
  • Add 2 tbsp of taco meat to one side of each tortilla.

5️⃣ Bake & Fold

  • Bake for 3 minutes, just enough to soften the tortillas.
  • Remove from the oven and fold each taco in half, pressing lightly to hold the shape.
  • Return to the oven and bake for 5 more minutes until golden & crispy.
  • Repeat with the next batch of 6 tacos.

6️⃣ Serve & Enjoy!

  • Let tacos cool slightly, then add your favorite toppings: salsa, sour cream, guacamole, jalapeños, or cilantro!

✨ Freezing & Reheating Instructions:

❄️ Freezing: Let tacos cool, wrap in foil (sets of 3), place in an airtight bag, and freeze for up to 3 months.
🔥 Reheating:

  • For a crispy shell: Bake at 250°F for 15 minutes.
  • For a soft shell: Microwave with a wet paper towel for 2-3 minutes.

Notes

🌶 Spicier Version? Add extra cayenne or hot sauce to the beef.
🥑 More Flavor? Serve with guacamole, salsa, or pickled jalapeños.
