Ingredients
✅ Marinade:
✔ ¼ cup olive oil
✔ ½ cup plain Greek yogurt
✔ 3 lemons (zest of 1, juice of all 3)
✔ 5 cloves garlic, minced
✔ 2 tbsp dried oregano
✔ 1 tsp coriander
✔ 1 tsp onion powder
✔ 1 tsp salt
✔ ¼ tsp black pepper
✅ Chicken:
✔ 2 lbs chicken breast
Instructions
Prepare the marinade – Whisk together all ingredients in a large bowl.
2️⃣ Marinate the chicken – Toss the chicken in the marinade, cover, and refrigerate for 30 minutes to 24 hours (the longer, the better!). Remove from the fridge 30 minutes before cooking.
3️⃣ Cook the chicken:
🔥 Heat a lightly oiled grill pan over medium-high heat.
🔥 Sear chicken for 5 minutes on one side.
🔥 Flip and transfer to a 400°F oven, baking for 15 minutes or until fully cooked.
4️⃣ Rest & serve – Let the chicken rest for 5 minutes before slicing. Enjoy!
