Ingredients

1 lb ground beef
1/2 tsp oregano, 1/2 tsp garlic powder, salt & pepper
12 oz rotini pasta
1 cup cherry tomatoes, halved
1/2 cup Kalamata olives, sliced
1 cucumber, diced
1/2 cup crumbled feta cheese
Lemon-Herb Vinaigrette:
1/4 cup olive oil
2 tbsp lemon juice
1 tsp Dijon mustard
1/2 tsp dried oregano
Salt & pepper to taste
Instructions
Cook pasta according to package instructions. Rinse with cold water and set aside.
Brown ground beef with oregano, garlic powder, salt, and pepper. Let cool slightly.
In a large bowl, combine pasta, ground beef, tomatoes, olives, cucumber, and feta.
Whisk together vinaigrette ingredients and toss with salad.
Chill before serving or enjoy at room temperature.
