Ingredients
For the Souvlaki Marinade:
- 10 garlic cloves, peeled
- 2 tbsp dried oregano
- 1 tsp dried rosemary
- 1 tsp sweet paprika
- 1 tsp each Kosher salt & black pepper
- ¼ cup Greek extra virgin olive oil
- ¼ cup dry white wine
- Juice of 1 lemon
- 2 bay leaves
For the Chicken:
- 2 ½ lb boneless, skinless chicken breast (cut into 1 ½-inch pieces)
Pita Fixings:
- Greek pita bread
- Tzatziki sauce
- Sliced tomato, cucumber, onions & Kalamata olives
Optional Sides:
- Greek salad
- Roasted garlic hummus
- Mezze platter
- Watermelon & cucumber salad
Instructions
1️⃣ Marinate the chicken: Blend garlic, oregano, rosemary, paprika, salt, pepper, olive oil, white wine, and lemon juice in a food processor. Pour over chicken, add bay leaves, mix well, and refrigerate for 2 hours (or overnight for best flavor).
2️⃣ Prepare for grilling: Soak wooden skewers in water for 30-45 minutes. Meanwhile, make tzatziki and prep veggies.
3️⃣ Grill the souvlaki: Heat a grill or griddle over medium-high heat. Thread marinated chicken onto skewers and grill for about 5 minutes, turning evenly. Brush lightly with leftover marinade (then discard the rest).
4️⃣ Assemble your pita: Grill pita bread briefly, spread tzatziki, add grilled chicken, and top with fresh veggies and olives.
