Ingredients

For the Chicken:

✔ 4 boneless, skinless chicken breasts (or thighs)
✔ 1 tsp Italian seasoning
✔ ½ tsp smoked paprika
✔ ½ tsp salt
✔ ¼ tsp black pepper
✔ 1 tbsp olive oil

For the Potatoes:

✔ 1.5 lbs baby Yukon Gold or red potatoes, halved
✔ 3 tbsp olive oil
✔ 4 cloves garlic, minced
✔ ⅓ cup grated Parmesan cheese
✔ ½ tsp salt
✔ ¼ tsp black pepper

Optional Garnish:

✔ 1 tbsp fresh parsley, chopped


Instructions

1️⃣ Preheat the Oven
🔸 Preheat to 400°F (200°C). Line a large baking sheet with parchment paper or grease lightly.

2️⃣ Prepare the Chicken
🔸 Pat chicken dry with paper towels.
🔸 Mix Italian seasoning, smoked paprika, salt, and pepper in a bowl.
🔸 Rub olive oil & seasoning mix onto chicken.

3️⃣ Prepare the Potatoes
🔸 In a large bowl, toss potatoes with olive oil, garlic, Parmesan, salt & pepper.

4️⃣ Assemble on the Pan
🔸 Place chicken on one side of the baking sheet.
🔸 Spread potatoes in a single layer on the other side.

5️⃣ Bake & Broil
🔸 Roast for 25-30 minutes, flipping potatoes halfway.
🔸 Ensure chicken reaches 165°F (74°C) with a meat thermometer.
🔸 In the last 5 minutes, sprinkle extra Parmesan & broil for a golden crust.

6️⃣ Garnish & Serve
🔸 Remove from oven, sprinkle fresh parsley, and serve hot! 😋
