🥩 For the Steak & Potatoes:

  • ¼ cup ghee or butter, divided
  • 1 tbsp olive oil
  • 1 lb Yukon Gold potatoes, cut into ½-inch cubes
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • ½ tsp dried oregano
  • ½ tsp sea salt (plus more to taste)
  • ¼ tsp ground black pepper (plus more to taste)
  • 1 ¼ lb sirloin steak, cut into ½-inch cubes

Instructions

1️⃣ Cook the potatoes: Heat a large cast iron skillet over medium heat. Add olive oil and 2 tbsp ghee. Toss in potatoes, garlic, thyme, oregano, salt, and pepper. Cook for 8-10 minutes, stirring every couple of minutes, until golden brown and fork-tender. Remove from pan.
2️⃣ Sear the steak: Turn heat to medium-high and add remaining 2 tbsp ghee. Add steak cubes, season with salt and pepper, and let sear for 2 minutes without stirring. Stir and cook for another 1-2 minutes until browned.
3️⃣ Combine & serve: Toss the potatoes back into the pan, stir to mix, and adjust seasoning if needed. Garnish with fresh parsley and enjoy!

Notes

Cut the potatoes evenly so they cook quickly, and resist stirring the steak too soon—you want that perfect sear!
