Ingredients
- 1 tbsp olive oil
- 4 tbsp unsalted butter (divided)
- 1 lb Yukon Gold potatoes, diced into ½-inch cubes
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 1 tsp dried oregano
- ½ tsp kosher salt
- ½ tsp ground pepper
- 1½ lbs sirloin steak, cut into 1-inch cubes
- Fresh parsley (optional, for garnish)
Instructions
1️⃣ Heat a cast iron skillet over medium-high heat. Add olive oil and 2 tbsp butter, letting it melt.
2️⃣ Add diced potatoes, garlic, rosemary, oregano, salt, and pepper. Cook undisturbed for 4 minutes, then stir and cook another 3-4 minutes until fork-tender. Remove from pan and set aside.
3️⃣ Increase heat to high. Add remaining 2 tbsp butter and let it melt. Add steak bites in a single layer. Sear for 1 minute, then stir and cook for another 1-2 minutes until desired doneness.
4️⃣ Remove from heat, add potatoes back to the skillet, and toss everything together.
5️⃣ Sprinkle with fresh parsley and serve hot!
