  • ½ cup butter (softened)
  • 1 tsp olive oil
  • 2 tsp minced garlic
  • 1 tsp Italian seasoning
  • 1 tbsp hot sauce (optional – we used Sriracha)
  • ½ cup chicken stock
  • ½ lemon (juiced)
  • 1 tbsp parsley (minced)
  • Red chili pepper flakes (optional)
  • Lemon slices (for garnish)

Instructions

1️⃣ Prepare the chicken: Cut chicken into bite-sized chunks and season with salt, pepper, and onion powder. Set aside.
2️⃣ Blanch the asparagus: Trim asparagus and blanch in boiling water for 2 minutes. Transfer to ice water, then drain and set aside. (Skip this step if using thin asparagus.)
3️⃣ Cook the chicken: Heat ½ the butter and olive oil in a skillet over medium-low heat. Add chicken bites and cook until golden brown on all sides. Lower heat, add 1 tsp garlic and Italian seasoning, and cook until fragrant. Remove chicken from the pan.
4️⃣ Make the garlic butter sauce: In the same skillet, add minced garlic, then deglaze with chicken broth. Let it simmer and reduce by half. Stir in remaining butter, lemon juice, hot sauce, and parsley.
5️⃣ Toss everything together: Add the asparagus and cook for 2 minutes. Return the chicken to the pan and stir for another minute to reheat.
6️⃣ Serve & enjoy: Garnish with parsley, chili flakes, and lemon slices. Serve immediately!
