For the Chicken:

  • 1 lb chicken tenderloins
  • 2 tbsp soy sauce
  • 1 tbsp olive oil
  • 2 tsp hot sauce
  • ½ tsp each: black pepper, garlic powder, onion powder

For the Potatoes & Sauce:

  • 1 lb baby gold potatoes, quartered
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 green onion, sliced
  • ½ tsp Italian seasoning
  • Optional: Chopped fresh parsley for garnish

Instructions

1️⃣ Marinate the Chicken – In a bowl, mix chicken with soy sauce, olive oil, hot sauce, pepper, garlic powder, and onion powder. Let it sit while you prep the potatoes.

2️⃣ Parboil the Potatoes – Boil potatoes in salted water for 8 minutes until fork-tender. Drain and set aside.

3️⃣ Fry the Potatoes – Heat olive oil and butter in a cast iron skillet over medium heat. Add potatoes and fry until golden brown (about 8 minutes), using tongs to turn them gently. Remove and set aside.

4️⃣ Cook the Chicken – Add the marinated chicken to the skillet. Sear on both sides until golden brown.

5️⃣ Add Garlic & Sauce – Stir in the minced garlic and cook until fragrant. Pour in the reserved marinade and cook until the chicken reaches 165°F (75°C) internally.

6️⃣ Bring It All Together – Return potatoes to the skillet, add green onions and Italian seasoning. Stir and cook for a minute until heated through
