2 (15 oz) cans whole kernel corn, drained
1 red bell pepper, finely diced
2 cups shredded Mexican blend cheese
1 cup mayo (light mayo works too)
1/4 tsp black pepper
1 (9.25 oz) bag Chili Cheese Fritos, lightly crushed
Fresh cilantro, for garnish (optional)
Instructions
In a large bowl, mix together corn, bell pepper, cheese, mayo, and black pepper.
Right before serving, fold in the crushed Fritos for the perfect crunch.
Garnish with fresh cilantro if you’d like a pop of color and freshness.
Serve immediately and watch it disappear!
