Ingredients
• 1 cup quinoa, rinsed
• 2 cups water
• 1 cup cherry tomatoes, halved
• 1 cucumber, diced
• 1/2 red onion, finely chopped
• 1/4 cup Kalamata olives, sliced
• 1/4 cup crumbled feta cheese
• 2 tbsp chopped fresh parsley
• 2 tbsp chopped fresh mint (optional)
🍋 Dressing: • 1/4 cup olive oil
• 2 tbsp lemon juice
• 1 garlic clove, minced
• Salt and pepper to taste
Instructions
In a saucepan, bring quinoa and water to a boil. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork and let cool.
In a large bowl, combine quinoa, tomatoes, cucumber, onion, olives, feta, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
Pour dressing over salad and toss gently. Chill before serving for best flavor!
