French Onion Chicken & Rice – The Ultimate Comfort Dish!

Ingredients

  • 3 tbsp butter, divided
  • 3 tbsp extra virgin olive oil, divided
  • 3 lbs sweet onion, sliced
  • 1 tbsp garlic, minced
  • 1½ tsp kosher salt, ½ tsp black pepper
  • 1 tsp tarragon, 1 tsp thyme
  • ⅓ cup brandy or white wine
  • 1 tbsp Worcestershire sauce
  • 8 oz button mushrooms, sliced
  • 1½ cups white rice (uncooked)
  • 2 cups baby spinach
  • 3 cups chicken stock
  • 1 cup heavy cream
  • 34 cups cooked chicken, bite-sized
  • 4 oz Gruyère Swiss cheese, shredded

Instructions

1️⃣ Caramelize onions: Cook onions in butter & oil for 40-45 minutes, stirring occasionally. Add garlic, seasonings, brandy, and Worcestershire sauce. Set aside.
2️⃣ Prepare rice: Cook mushrooms, then stir in rice and spinach. Add chicken stock, simmer covered for 15 minutes.
3️⃣ Combine: Stir in heavy cream and chicken, heating until warm.
4️⃣ Assemble & Bake: Pour rice mixture into a greased casserole dish, top with onions and cheese. Broil until bubbly!
