Ingredients

✔️ 1 ⅔ cups almond flour
✔️ ⅖ cup vanilla protein powder (or just under ½ cup)
✔️ 3 tbsp poppy seeds
✔️ 1 ½ tsp baking powder
✔️ ⅓ tsp sea salt
✔️ 3 large pasture-raised eggs
✔️ ⅖ cup unsweetened almond milk
✔️ 3 tbsp fresh lemon juice
✔️ 1 ½ tbsp lemon zest
✔️ 3 tbsp raw honey or pure maple syrup
✔️ 1 ½ tsp vanilla extract
✔️ 3 tbsp melted coconut oil


🍋 Lemon Glaze:

✔️ 1 ½ tbsp fresh lemon juice
✔️ 2 tbsp melted coconut butter
✔️ ¾ tbsp pure maple syrup or raw honey (adjust for sweetness)
✔️ Optional: Extra lemon zest for garnish


Instructions

1️⃣ Preheat oven to 350°F (175°C) and line a muffin tin with 10 liners.
2️⃣ In a bowl, whisk together the almond flour, protein powder, poppy seeds, baking powder, and salt.
3️⃣ In another bowl, whisk the eggs, almond milk, lemon juice, zest, honey/maple syrup, vanilla, and melted coconut oil.
4️⃣ Combine the wet and dry ingredients and stir until just mixed.
5️⃣ Divide the batter evenly into the muffin liners.
6️⃣ Bake for 18-22 minutes or until a toothpick comes out clean. Let muffins cool.
7️⃣ Mix the glaze ingredients until smooth, adjusting thickness with lemon juice if needed.
8️⃣ Drizzle the glaze over the cooled muffins, sprinkle with extra lemon zest, and let set for 5 minutes.
