Ingredients
✔️ 12 oz jumbo pasta shells
✔️ 1 tbsp kosher salt
✔️ 30 oz whipped cottage cheese (or ricotta)
✔️ 6 oz Parmesan cheese, grated
✔️ 1 egg
✔️ 1-2 garlic cloves, minced
✔️ 1 tbsp fresh parsley, minced
✔️ ¾ cup fresh basil, chopped (8-10 leaves)
✔️ ½ tsp salt
✔️ ½ tsp black pepper
✔️ 28 oz marinara sauce
✔️ 8 oz mozzarella cheese, grated
Instructions
1️⃣ Preheat oven to 350°F (175°C). Lightly spray a 9×13 baking dish with cooking spray. Spread half the marinara sauce on the bottom.
2️⃣ Cook the shells: Boil water with 1 tbsp salt, cook shells 3 minutes shy of al dente (per package directions). Drain & rinse with cool water.
3️⃣ Make the filling: In a bowl, mix cottage cheese (or ricotta), Parmesan, egg, garlic, parsley, basil, salt & pepper.
4️⃣ Stuff the shells: Spoon the mixture into each pasta shell & place them in the baking dish.
5️⃣ Assemble & bake: Cover shells with remaining marinara sauce, sprinkle with mozzarella cheese, and bake for 25 minutes until hot & bubbly.
6️⃣ Serve & enjoy! 🤤
