  • 170g butter
  • 115g soft brown or demerara sugar
  • 55g golden syrup
  • 225g porridge oats (not jumbo oats)
  • 50g plain flour
  • Pinch of salt

Instructions

1️⃣ Preheat your oven to 180°C (conventional).
2️⃣ Grease and line an 8-inch square baking tin with parchment paper.
3️⃣ In a large pan, melt the butter, sugar, and syrup over low heat until smooth (don’t let it boil!).
4️⃣ Stir in the flour, salt, and oats, mixing well.
5️⃣ Press the mixture firmly into the prepared tin and bake for 25–30 minutes until golden brown.
6️⃣ Let it cool slightly, then lightly score the top into bars—don’t cut all the way through yet!
7️⃣ Once fully cooled, slice completely and enjoy!

Notes

✔️ Use porridge oats for the best texture.
✔️ Don’t overheat the butter-sugar-syrup mix—it makes them too hard.
✔️ Press the mixture firmly in the tin to prevent crumbling.
✔️ Store in an airtight container with baking parchment to keep them chewy.
