Easy Slow Cooker Beef Stew

Ingredients

  • 3 lbs beef stew meat, cubed

  • ¼ cup all-purpose flour + 2 tbsp (for thickening)

  • ½ tsp salt (or to taste)

  • 3 tbsp olive oil

  • 3 tbsp butter

  • 3 onions, sliced

  • ¼ cup red wine

  • 4 large potatoes, cubed

  • 1 cup baby carrots

  • 1 tbsp dried parsley

  • 1 tsp black pepper

  • 2 cups boiling water

  • 1 packet dry onion soup mix (1 oz)

  • ¼ cup warm water (for slurry)


Instructions

  • Toss meat with flour and salt in a plastic bag. Brown in batches with olive oil. Transfer to slow cooker.

  • Sauté onions in butter until soft; add to slow cooker.

  • Deglaze pan with red wine and add the flavorful bits to the pot.

  • Stir in potatoes, carrots, parsley, and pepper.

  • Mix soup mix with 2 cups boiling water and pour in.

  • Cook on High for 30 mins, then Low for 6 hrs.

  • Mix 2 tbsp flour with ¼ cup warm water and stir in to thicken. Cook uncovered for 15 more mins.
