Ingredients

3 lbs beef stew meat, cubed

¼ cup all-purpose flour + 2 tbsp (for thickening)

½ tsp salt (or to taste)

3 tbsp olive oil

3 tbsp butter

3 onions, sliced

¼ cup red wine

4 large potatoes, cubed

1 cup baby carrots
-
1 tbsp dried parsley

1 tsp black pepper

2 cups boiling water

1 packet dry onion soup mix (1 oz)

¼ cup warm water (for slurry)
Instructions

Toss meat with flour and salt in a plastic bag. Brown in batches with olive oil. Transfer to slow cooker.

Sauté onions in butter until soft; add to slow cooker.

Deglaze pan with red wine and add the flavorful bits to the pot.

Stir in potatoes, carrots, parsley, and pepper.

Mix soup mix with 2 cups boiling water and pour in.

Cook on High for 30 mins, then Low for 6 hrs.

Mix 2 tbsp flour with ¼ cup warm water and stir in to thicken. Cook uncovered for 15 more mins.
