Ingredients
For the Meatballs:
1 lb ground chicken or turkey
1/2 cup breadcrumbs
1 egg
2 green onions, finely chopped
2 cloves garlic, minced
Salt & pepper to taste
For the Firecracker Sauce:
1/3 cup buffalo hot sauce
1/4 cup brown sugar or honey
1 tablespoon apple cider vinegar
1/2 teaspoon crushed red pepper (optional for heat)
1 tablespoon water
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment.
In a bowl, mix meatball ingredients. Roll into 1-inch balls and place on the sheet.
Bake for 15-18 minutes, until golden and cooked through.
While baking, whisk sauce ingredients in a saucepan over medium heat until slightly thickened.
Toss cooked meatballs in the warm firecracker sauce.
Serve over rice, lettuce, or with toothpicks as a zesty appetizer!
