Pair them with mashed potatoes for a meal that feels like a warm hug. 💕

For the Meatloaf:
✅ 1½ lbs lean ground beef (or turkey)
✅ ⅔ cup panko or regular breadcrumbs
✅ ½ cup onion, chopped
✅ 1 tbsp barbecue sauce
✅ 1 tbsp mustard
✅ ½ tsp garlic powder
✅ 1½ tsp chili powder
✅ ½ tsp salt
✅ ½ tsp black pepper
✅ 1 egg, lightly beaten

For the Meatloaf Sauce:
✅ ⅓ cup light brown sugar
✅ ½ cup ketchup
✅ 2 tsp Dijon mustard
✅ ¼ tsp ground nutmeg


Instructions

1️⃣ Preheat & Prep:

  • Preheat oven to 350°F.
  • Grease or line a 12-count muffin tin.

2️⃣ Make the Meatloaf Sauce:

  • In a small bowl, whisk together brown sugar, ketchup, Dijon mustard, and nutmeg. Set aside.

3️⃣ Mix the Meatloaf:

  • In a large bowl, combine ground beef, breadcrumbs, onion, barbecue sauce, mustard, garlic powder, chili powder, salt, pepper, and egg.
  • Mix well using your hands or a spoon.

4️⃣ Shape & Bake:

  • Divide the mixture evenly into the muffin tin, pressing it down into each cup.
  • Bake for 15 minutes. Remove from the oven and soak up any excess grease with a paper towel.

5️⃣ Add the Sauce & Finish Baking:

  • Generously spoon the meatloaf sauce over each muffin.
  • Return to the oven and bake for another 10-15 minutes, until fully cooked.

6️⃣ Serve & Enjoy:

  • Let cool for 5 minutes, then serve with mashed potatoes and extra sauce! 😋

Notes

💡 Make-Ahead & Freezing Tips:
Make ahead: Prep the meatloaf mixture and press it into the muffin tin, then cover and refrigerate overnight.
Freeze: Freeze uncooked mini meatloaves in the tin for 1 hour, then transfer to a freezer bag. Thaw in the fridge overnight and bake as directed.
