Ingredients
For the Chicken & Veggies:
- 3 boneless chicken breasts (diced into 1-inch pieces)
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp olive oil (divided)
- 2 cups broccoli florets (bite-sized)
- ½ yellow bell pepper (cut into 1-inch pieces)
- ½ red bell pepper (cut into 1-inch pieces)
- ½ cup carrots (shredded)
- ½ tsp ground ginger
- 2 tsp minced garlic
- 2 tbsp sesame seeds (for garnish)
For the Stir Fry Sauce:
- 1 tbsp cornstarch
- ¼ cup chicken broth
- ¼ cup soy sauce
- 2 tbsp honey
Instructions
1️⃣ In a small bowl, whisk together cornstarch, chicken broth, soy sauce, and honey. Set aside.
2️⃣ Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add chicken, season with salt & pepper, and cook 3-5 minutes until browned. Remove and set aside.
3️⃣ Add remaining 1 tbsp olive oil to the pan. Stir in broccoli, bell peppers, and carrots. Cook for 3-5 minutes until tender-crisp.
4️⃣ Stir in ginger & garlic and cook for 1-2 minutes until fragrant.
5️⃣ Return chicken to the skillet and pour in the stir fry sauce. Stir well and bring to a boil for 1 minute to thicken.
6️⃣ Garnish with sesame seeds and serve over rice or noodles. Enjoy!
