Description

No time for an elaborate Easter feast? No problem! This one-pan Easter dinner is packed with tender roasted potatoes, garlicky green beans, and a sweet honey-glazed ham with pineapple, all cooked together for a simple yet festive meal. Perfect for a small gathering or an effortless holiday dinner! ✨

Ingredients

✔️ 1 lb baby potatoes, halved
✔️ ½ lb green beans, trimmed
✔️ 3 tbsp olive oil
✔️ 4 cloves garlic, minced
✔️ 3 tsp fresh thyme
✔️ 1 tsp onion powder
✔️ 1 tsp salt
✔️ ½ tsp pepper
✔️ 1 quartered boneless ham, sliced (or 2-3 ham steaks)
✔️ 1 (20 oz) can sliced pineapple, drained

Honey Glaze:

✔️ ¼ cup honey 🍯
✔️ ¼ cup brown sugar
✔️ 1 tbsp apple cider vinegar
✔️ 1 tbsp Dijon mustard

Instructions

1️⃣ Preheat oven to 450°F. Lightly grease a sheet pan.
2️⃣ Arrange veggies: Place potatoes on 1/3 of the pan and green beans in the middle. Drizzle with olive oil, garlic, thyme, onion powder, salt, and pepper. Toss to coat.
3️⃣ Layer ham & pineapple: On the last third of the pan, alternate layers of ham and pineapple slices. If ham is thin, double up the slices.
4️⃣ Make the glaze: In a small saucepan, combine honey, brown sugar, vinegar, and Dijon mustard. Simmer until smooth.
5️⃣ Glaze & bake: Brush the honey glaze over the ham and pineapple. Bake for 25-30 minutes or until potatoes are fork-tender.
6️⃣ Serve & enjoy! 🐣✨

Notes

🔥 No quarter ham? Use 2-3 ham steaks and slice them for layering.
🔥 Extra ham? Save leftovers for sandwiches the next day!
🔥 Want a crispier finish? Broil for the last 2-3 minutes for a golden top.
