Ingredients
- 2 lbs Russet or Yukon Gold potatoes
- ¼ cup unsalted butter, divided
- ¼ cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 tsp salt
- ½ tsp black pepper
- 3 large egg yolks
- 1 tbsp sea salt (for garnish)
- Fresh chopped chives or parsley (for garnish)
Instructions
1️⃣ Boil the Potatoes – Peel and chop potatoes. Place in a pot, cover with cold water, add salt, and bring to a boil. Cook for 15-20 minutes until fork-tender.
2️⃣ Prep the Oven – Preheat to 425°F (220°C) and line a baking sheet with parchment paper.
3️⃣ Melt & Warm – Melt butter and warm cream in separate bowls. Set aside.
4️⃣ Mash the Potatoes – Drain well, return to pot over low heat to remove excess moisture, then mash until smooth.
5️⃣ Mix Ingredients – Stir in 2 tbsp melted butter, warm cream, Parmesan, salt, and pepper. Mix well, then add egg yolks and combine.
6️⃣ Pipe the Potatoes – Transfer mixture to a piping bag with a large star tip and pipe small swirls onto the baking sheet, spacing 1 inch apart.
7️⃣ Bake to Perfection – Brush with remaining melted butter and bake for 15-20 minutes, until golden brown and crispy on the edges.
8️⃣ Garnish & Serve – Sprinkle with sea salt, fresh chives, or parsley, and enjoy immediately!
