Ingredients
For the Addictive Bang Bang Sauce:
- 1 cup real mayonnaise
- ½ cup Thai sweet chili sauce
- 1 tsp Sriracha (or more if you like it spicy)
- 2 tbsp honey
For the Crispy Chicken:
- 1½ lbs chicken tenderloins (or chicken breast cut into strips)
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 1 large egg (room temp)
- 1 tbsp Sriracha
- ½ tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp black pepper
- ⅛ tsp cayenne pepper (optional, but recommended)
- 2 cups panko breadcrumbs
- Canola oil (for frying)
- Chopped parsley (for garnish)
Instructions
1️⃣ Make the Sauce: Mix mayonnaise, sweet chili sauce, Sriracha, and honey in a bowl. Set aside (and try not to eat it all!).
2️⃣ Prepare the Batter: In a medium bowl, whisk together buttermilk, flour, cornstarch, egg, Sriracha, garlic powder, salt, black pepper, and cayenne. It’ll look weird, but trust the process!
3️⃣ Coat the Chicken: Toss the chicken into the batter, making sure each piece is well-coated.
4️⃣ Bread the Chicken: Pour panko onto a plate. One by one, shake off excess batter from each chicken strip and roll it in panko. Press gently to make sure it sticks.
5️⃣ Fry to Perfection: Heat about 1 inch of oil in a large skillet to 365°F. Fry the chicken in batches for 2-3 minutes per side until golden brown and crispy. Drain on paper towels.
6️⃣ Sauce It Up! Drizzle generously with the Bang Bang sauce, sprinkle with chopped parsley, and dig in while hot!
