For the cookie dough:
½ cup butter, softened
½ cup sugar
1 egg yolk
1 tsp vanilla extract
1 cup all-purpose flour
Pinch of salt
For the filling & topping:
4 oz cream cheese
2 tbsp powdered sugar
½ tsp vanilla
Granulated sugar for topping (about ¼ cup)
Instructions
Mix cream cheese, powdered sugar, and vanilla. Scoop small dollops and freeze until firm.
Cream butter and sugar. Add egg yolk and vanilla. Mix in flour and salt until dough forms.
Chill dough for 20 minutes. Scoop, flatten slightly, and place frozen filling inside. Roll into balls and slightly flatten.
Bake at 350°F (175°C) for 10–12 minutes.
Cool slightly, sprinkle with sugar, and torch the tops until caramelized and golden.
