Ingredients
4 boneless chicken thighs or breasts
2 tbsp olive oil
3 garlic cloves, minced
1 tsp dried thyme or Italian seasoning
Salt & black pepper to taste
Juice of ½ lemon (optional)
For the Polenta:
1 cup yellow cornmeal (polenta)
4 cups water or chicken broth
1 tbsp butter
½ cup grated Parmesan cheese
Salt to taste
Instructions
Cook the Chicken:
Heat olive oil in a skillet over medium heat.
Season chicken with salt, pepper, garlic, and thyme.
Cook 6–7 minutes per side or until golden and fully cooked.
Squeeze lemon over top if using. Set aside.
Make the Polenta:
In a saucepan, bring water or broth to a boil.
Gradually whisk in cornmeal, stirring constantly.
Reduce heat to low and cook 20–25 minutes, stirring often, until thick and creamy.
Stir in butter, Parmesan, and salt to taste.
Assemble:
Spoon creamy polenta into bowls or plates.
Top with sliced or whole chicken.
Garnish with fresh herbs or a sprinkle of cheese if desired.
