These Creamy Garlic Butter Tuscan Mushrooms are coated in a rich, garlicky sauce filled with sun-dried tomatoes, Parmesan, and spinach. Ingredients
✔️ 2 tbsp salted butter
✔️ 4 cloves garlic, finely diced
✔️ 21 oz mushrooms, washed & dried
✔️ 1 small onion, chopped
✔️ ½ cup white wine (optional)
✔️ 5 oz sun-dried tomatoes (jarred in oil, reserve 1 tbsp oil)
✔️ 1 ½ cups heavy cream (see notes for substitutes)
✔️ Salt & black pepper, to taste
✔️ 3 cups baby spinach leaves, washed
✔️ ½ cup Parmesan cheese, freshly grated
✔️ 1 tsp dried Italian herbs
✔️ 1 tbsp fresh parsley, chopped
✔️ 1 tsp cornstarch mixed with 1 tbsp water (optional for a thicker sauce)
Instructions
1️⃣ Sauté the aromatics:
🔸 Heat a large skillet over medium-high heat.
🔸 Melt butter, then sauté onion until soft & transparent.
🔸 Add garlic and cook for 1 minute until fragrant.
2️⃣ Cook the mushrooms & tomatoes:
🔸 Add sun-dried tomatoes (with 1 tbsp reserved oil) and cook for 2 minutes.
🔸 Stir in mushrooms, cooking for 5 minutes until softened.
3️⃣ Deglaze & simmer the sauce:
🔸 Pour in white wine (if using) and let it reduce by half. (Skip if preferred.)
🔸 Lower heat and stir in heavy cream, salt, and pepper.
🔸 Let it simmer gently, stirring occasionally.
4️⃣ Add spinach & cheese:
🔸 Stir in spinach and let it wilt in the sauce.
🔸 Mix in Parmesan cheese, stirring until melted.
5️⃣ Thicken (optional):
🔸 For a thicker sauce, add cornstarch mixture and stir until smooth.
6️⃣ Finish & serve:
🔸 Sprinkle with Italian herbs and fresh parsley.
🔸 Serve over mashed cauliflower, zucchini noodles, pasta, or rice.
