Ingredients
- 8 oz linguine pasta
- 2 boneless, skinless chicken breasts
- 2 tsp olive oil
- 2 tbsp unsalted butter
- 1 ½ to 2 tbsp Cajun seasoning (adjust to taste)
- 3 garlic cloves, minced
- ⅔ cup diced tomatoes
- 1 ½ cups heavy whipping cream
- ½ cup grated Parmesan cheese
- 2 tbsp parsley, chopped (for garnish)
Instructions
1️⃣ Cook the pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain and keep warm.
2️⃣ Season the chicken with Cajun seasoning and sear in a hot skillet with oil. Cook through, then slice into strips.
3️⃣ In the same pan, sauté butter & garlic until fragrant, then add tomatoes and cook for 2 more minutes.
4️⃣ Stir in the heavy cream, more Cajun seasoning, and Parmesan. Bring to a simmer.
5️⃣ Add the sliced chicken and pasta to the sauce, tossing everything together. Use reserved pasta water to thin if needed.
6️⃣ Serve with freshly grated Parmesan & parsley. Enjoy!
