Ingredients
For the Scones
✔ 2 cups (240g) all-purpose flour
✔ ¼ cup granulated sugar
✔ ¼ cup light brown sugar
✔ 2 tsp baking powder
✔ ½ tsp salt
✔ ½ cup frozen unsalted butter (grated)
✔ 1 orange, zested & juiced
✔ 1 cup fresh or dried cranberries, chopped
✔ ½ cup heavy cream (plus extra for brushing)
✔ 1 large egg
✔ 1 tsp vanilla extract
For the Orange Glaze
✔ 1 cup powdered sugar
✔ 2-3 tbsp fresh orange juice
Instructions
1️⃣ In a large bowl, whisk flour, sugars, baking powder, and salt.
2️⃣ Grate frozen butter into the bowl and mix with fingers or a pastry cutter until it resembles coarse crumbs.
3️⃣ Stir in orange zest and cranberries.
4️⃣ In a separate bowl, whisk together heavy cream, egg, and vanilla. Pour over flour mixture and mix gently until a shaggy dough forms.
5️⃣ Turn dough onto a floured surface, knead a few times, and shape into a 1-inch thick circle. Cut into 8 wedges and place on a parchment-lined baking sheet.
6️⃣ Brush scones with heavy cream and freeze for 15-30 minutes.
7️⃣ Preheat oven to 400°F (205°C) and space scones 2-3 inches apart on a new parchment-lined baking sheet.
8️⃣ Bake 18-22 minutes until golden brown. Cool for 10 minutes before glazing.
9️⃣ For the glaze, whisk powdered sugar and orange juice. Drizzle over cooled scones.
