Ingredients
1 tsp olive oil
• 12 oz Italian-style chicken sausages, sliced
• 1 cup diced onion
• ½ tsp salt
• 2 tsp minced garlic
• ½ tsp crushed red pepper (optional)
• 4 cups chicken broth
• 8 oz Radiatore pasta (or any small pasta)
• 2 cups chopped zucchini
• 2 tbsp lemon juice
• 1½ cups grated Parmesan cheese, divided
• 1 cup halved grape tomatoes
• 1/3 cup chopped fresh basil
Instructions
Cook Sausages: In a large skillet, heat olive oil over medium. Add sausage and onion. Cook until sausage is browned and onion is soft.
Add Flavor: Stir in garlic, salt, and red pepper flakes (if using). Cook until fragrant, about 1 minute.
Simmer: Pour in chicken broth, scraping the pan. Add pasta and bring to a boil. Reduce heat and simmer uncovered for 10 minutes.
Add Veggies: Stir in zucchini and cook 5 more minutes until pasta is tender.
Finish: Add lemon juice, 1 cup Parmesan, tomatoes, and basil. Stir gently to combine.
Serve: Top with remaining Parmesan. Enjoy warm with a smile.
