Ingredients
2 packs ramen noodles (discard seasoning)
1 cup shredded cabbage (green or purple)
1 carrot, grated
1/2 red bell pepper, thinly sliced
2 green onions, chopped
1/4 cup chopped fresh cilantro
1/4 cup sliced almonds or crushed peanuts (optional)
1 tablespoon sesame seeds
Dressing:
1/4 cup soy sauce (low sodium)
2 tablespoons rice vinegar
1 tablespoon sesame oil
1 tablespoon honey or maple syrup
1 teaspoon grated fresh ginger
1 clove garlic, minced
Instructions
Cook ramen noodles, rinse under cold water, and drain well.
In a large bowl, mix noodles with cabbage, carrot, bell pepper, green onions, and cilantro.
Whisk together all dressing ingredients.
Pour dressing over salad and toss to coat.
Top with almonds and sesame seeds just before serving.
Chill for 30 minutes for best flavor.
