Main Ingredients:

  • 2 tbsp olive oil (divided)
  • 2 tbsp butter (divided)
  • 1 lb boneless, skinless chicken breasts or tenders (cut into 1-inch chunks)
  • 10 oz white mushrooms (thickly sliced)
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste

Creamy Pesto Sauce:

  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning (thyme, oregano, basil)
  • ⅛ tsp red pepper flakes
  • 1 cup sodium-free chicken broth
  • ½ cup (4 oz) basil pesto
  • ½ cup Parmesan cheese, shredded
  • ½ tsp salt
  • Chopped fresh basil (for garnish)

Pasta:

  • 10 oz fettuccine pasta

Instructions

1️⃣ Cook the chicken: Heat 1 tbsp olive oil & 1 tbsp butter in a skillet over medium heat. Cook chicken for 4 minutes on one side, flip, and cook 2 minutes on the other side. Remove and set aside. (Cook in 2 batches if needed.)

2️⃣ Sauté the mushrooms: Add remaining olive oil & butter to the pan. Cook mushrooms without stirring for 2-3 minutes, then flip and cook another 1-2 minutes. Remove and set aside.

3️⃣ Make the sauce: In the same skillet, sauté garlic for 1 minute. Add Italian seasoning, red pepper flakes, & chicken broth, cooking for 3-4 minutes to reduce. Stir in pesto and mix well. Reduce heat and mix in Parmesan cheese until smooth.

4️⃣ Cook the pasta: Boil salted water and cook pasta until al dente. Drain (do not rinse).

5️⃣ Assemble the dish: Toss pasta in the sauce, then add chicken & mushrooms. Stir well, adjust seasoning, and garnish with fresh basil.
