- 2 cups cheddar cheese, shredded
- 6 strips bacon
- Salt and pepper, to taste
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 2 small boneless, skinless chicken breasts
- 2 cups uncooked pasta (rotini recommended)
- 2 tablespoons butter
- 2 tablespoons flour
- 1 tablespoon garlic, minced
- 2 cups half and half
- 2 tablespoons dry ranch dressing seasoning mix
1️⃣ Cook the Bacon:
- Place the bacon in a large skillet over low heat. Cook slowly until crispy.
- Transfer to a plate and let cool before roughly chopping.
- Pour the bacon drippings into a small bowl, wipe the skillet clean, and set aside.

- Slice each chicken breast into 2-3 thinner pieces (they will plump while cooking).
- Pat dry and season both sides with salt, pepper, onion powder, and Italian seasoning.
- Heat 2 tablespoons of bacon drippings (or oil) in the skillet over medium-high heat.
- Sear the chicken for 3-4 minutes per side until golden brown and fully cooked.
- Let the chicken rest for 5 minutes, then cut into bite-sized cubes.

- Boil a large pot of salted water and cook the pasta according to package instructions.
- Drain and set aside. Begin preparing the sauce while the pasta cooks.

- Stir in the flour and cook for another minute, stirring continuously.
- Heat the half and half in the microwave for about 40 seconds to temper it. Gradually add it to the skillet in small splashes, stirring constantly.
- Bring the sauce to a gentle bubble, then reduce the heat to low.
- Stir in the ranch seasoning mix. Gradually add the shredded cheddar cheese, stirring until smooth.
