Chicken Bacon Ranch Pasta: A Creamy, Flavor-Packed Dinner Recipe

  • 2 cups cheddar cheese, shredded
  • 6 strips bacon
  • Salt and pepper, to taste
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 2 small boneless, skinless chicken breasts
  • 2 cups uncooked pasta (rotini recommended)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon garlic, minced
  • 2 cups half and half
  • 2 tablespoons dry ranch dressing seasoning mix

Instructions

1️⃣ Cook the Bacon:

  1. Place the bacon in a large skillet over low heat. Cook slowly until crispy.
  2. Transfer to a plate and let cool before roughly chopping.
  3. Pour the bacon drippings into a small bowl, wipe the skillet clean, and set aside.

2️⃣ Prepare the Chicken:

  1. Slice each chicken breast into 2-3 thinner pieces (they will plump while cooking).
  2. Pat dry and season both sides with salt, pepper, onion powder, and Italian seasoning.
  3. Heat 2 tablespoons of bacon drippings (or oil) in the skillet over medium-high heat.
  4. Sear the chicken for 3-4 minutes per side until golden brown and fully cooked.
  5. Let the chicken rest for 5 minutes, then cut into bite-sized cubes.

3️⃣ Boil the Pasta:

  1. Boil a large pot of salted water and cook the pasta according to package instructions.
  2. Drain and set aside. Begin preparing the sauce while the pasta cooks.

4️⃣ Make the Sauce:

  1. Melt the butter in the same skillet over medium heat. Add the minced garlic and sauté for 1 minute.
  2. Stir in the flour and cook for another minute, stirring continuously.
  3. Heat the half and half in the microwave for about 40 seconds to temper it. Gradually add it to the skillet in small splashes, stirring constantly.
  4. Bring the sauce to a gentle bubble, then reduce the heat to low.
  5. Stir in the ranch seasoning mix. Gradually add the shredded cheddar cheese, stirring until smooth.

5️⃣ Combine and Serve:

  1. Add the cooked pasta to the sauce, gently tossing to coat.
  2. Stir in the chicken and heat through.
  3. Sprinkle the bacon on top or stir it into the pasta.
  4. Serve hot and enjoy!

Notes

  • Baking option: Transfer the pasta mixture to a casserole dish, top with extra cheese, and broil for 3-5 minutes until bubbly and golden.
  • Spice it up: Add a pinch of red pepper flakes for a slight kick.
