Ingredients

✅ 2 cups quick-cooking oats (not rolled or steel-cut)
✅ 1 cup crispy rice cereal
✅ 1/3 cup packed light brown sugar
✅ 1/4 cup honey (or brown rice syrup for a honey-free option)
✅ 4 tbsp unsalted butter
✅ 1 tsp vanilla extract
✅ 3 tbsp mini chocolate chips


Instructions

1️⃣ Lightly coat an 8-inch square baking pan with nonstick spray and line with parchment paper.
2️⃣ In a large bowl, mix oats and rice cereal; set aside.
3️⃣ In a small saucepan, bring brown sugar, honey, and butter to a boil over medium-high heat. Reduce heat and simmer for 2 minutes until the sugar dissolves. Remove from heat and stir in vanilla extract.
4️⃣ Pour the warm mixture over the dry ingredients and mix well until fully combined.
5️⃣ Press the mixture firmly into the prepared pan, ensuring it’s well packed. Sprinkle with mini chocolate chips and lightly press them down.
6️⃣ Let the bars cool at room temperature for a couple of hours, then slice into bars and enjoy!
