Ingredients
• 1 cup unsalted butter, softened
• 1 cup granulated sugar
• 4 large eggs
• 1 ½ cups all-purpose flour
• 1 tsp baking powder
• ½ tsp salt
• ½ tsp almond extract
• ½ cup ground almonds
• 1 cup chopped maraschino cherries (drained)
• Sliced almonds for topping
• Powdered sugar for dusting (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
Cream butter and sugar until light and fluffy.
Beat in eggs one at a time. Add almond extract.
Sift flour, baking powder, and salt. Mix into the wet ingredients.
Fold in ground almonds and cherries.
Pour batter into the pan and smooth the top. Sprinkle with sliced almonds.
Bake for 45–50 minutes or until a toothpick comes out clean.
Cool, then dust with powdered sugar if desired.
