Ingredients
🫑 12 mini bell peppers, halved & deseeded
🥩 1 lb ground beef
🧂 1/2 tsp salt
⚫ 1/2 tsp black pepper
🌶️ 1/2 tsp paprika
🌿 1 tsp Italian seasoning
🧄 1/2 tsp garlic powder
🌾 1 tsp ground cumin
🧅 1 small onion, grated (or 2 tsp onion powder)
🥚 1 large egg white
🧀 1/2 cup shredded mozzarella
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 350°F (175°C).
- Spray a baking sheet with olive oil spray.
2️⃣ Make the Filling
- In a large bowl, mix together the ground beef, seasonings, grated onion, and egg white.
- Stir until well combined.
3️⃣ Prep the Peppers
- Slice each mini pepper in half lengthwise and remove the seeds.
- Fill each pepper half with the ground beef mixture, keeping the top flat.
4️⃣ Bake
- Arrange stuffed peppers on the baking sheet.
- Bake for 20 minutes, until the peppers soften and the beef is fully cooked.
5️⃣ Add Cheese & Serve
- Sprinkle mozzarella over the stuffed peppers.
- Bake for 3-4 more minutes, until the cheese is melted and bubbly.
- Garnish with chopped parsley (optional).
