🫑 12 mini bell peppers, halved & deseeded
🥩 1 lb ground beef
🧂 1/2 tsp salt
1/2 tsp black pepper
🌶️ 1/2 tsp paprika
🌿 1 tsp Italian seasoning
🧄 1/2 tsp garlic powder
🌾 1 tsp ground cumin
🧅 1 small onion, grated (or 2 tsp onion powder)
🥚 1 large egg white
🧀 1/2 cup shredded mozzarella


Instructions

1️⃣ Preheat & Prep

  • Preheat oven to 350°F (175°C).
  • Spray a baking sheet with olive oil spray.

2️⃣ Make the Filling

  • In a large bowl, mix together the ground beef, seasonings, grated onion, and egg white.
  • Stir until well combined.

3️⃣ Prep the Peppers

  • Slice each mini pepper in half lengthwise and remove the seeds.
  • Fill each pepper half with the ground beef mixture, keeping the top flat.

4️⃣ Bake

  • Arrange stuffed peppers on the baking sheet.
  • Bake for 20 minutes, until the peppers soften and the beef is fully cooked.

5️⃣ Add Cheese & Serve

  • Sprinkle mozzarella over the stuffed peppers.
