Ingredients
🥩 1/2 lb ground beef
🧈 4 tbsp butter, divided
🥕 3/4 cup carrots, diced
🌿 3/4 cup celery, diced
🧅 3/4 cup onion, diced
🌿 1 tsp dried basil
🌿 1 tsp dried parsley
🥔 4 cups potatoes, diced
🍗 3 cups chicken broth
🌾 1/4 cup all-purpose flour
🧀 1 to 2 cups Velveeta, cubed
🥛 1 1/2 cups whole milk
🧂 3/4 tsp salt
⚫ 1/4 to 1/2 tsp black pepper
🥄 1/4 cup sour cream
🍽️ Optional toppings: Onion rings, green onions, crumbled bacon
Instructions
1️⃣ Cook the Beef
- In a large pot or Dutch oven, cook the ground beef over medium heat for 6-8 minutes, breaking it apart.
- Once browned, drain and set aside.
2️⃣ Sauté the Veggies
- In the same pot, melt 1 tbsp butter.
- Add carrots, celery, onions, basil, and parsley.
- Sauté for 10 minutes, until veggies are tender.
3️⃣ Simmer the Soup
- Add potatoes, ground beef, and chicken broth to the pot.
- Bring to a boil, then reduce the heat and cover.
- Simmer for 10-12 minutes, until potatoes are fork-tender.
4️⃣ Make the Roux
- In a separate pan, melt 3 tbsp butter over medium-low heat.
- Stir in flour and cook for 3-5 minutes, stirring continuously, until bubbly.
- Add this roux to the soup, stirring well.
- Bring to a boil and cook for 2 more minutes to thicken.
5️⃣ Add the Cheese & Finish
- Lower the heat and stir in Velveeta, milk, salt, and black pepper.
- Once the cheese is melted, remove from heat and stir in sour cream.
6️⃣ Serve & Enjoy!
- Top with onion rings, green onions, and crumbled bacon for extra flavor.
