Ingredients
2 ripe peaches, halved and grilled
3 cups shredded cabbage (green or mix)
½ cup pickled jalapeños, chopped
¼ cup red onion, thinly sliced
2 tbsp chopped cilantro (optional)
For the Honey-Lime Vinaigrette:
2 tbsp honey
Juice of 2 limes
2 tbsp olive oil
Salt and pepper to taste
Instructions
Grill Peaches: Lightly oil peach halves and grill for 2–3 minutes per side until charred. Cool and slice thin.
Make Dressing: Whisk together honey, lime juice, olive oil, salt, and pepper.
Assemble Slaw: In a large bowl, combine cabbage, grilled peaches, jalapeños, red onion, and cilantro.
Toss & Chill: Pour dressing over and toss gently. Let sit for 15–30 minutes to blend flavors.
Serve Cold or Room Temp: Garnish with extra cilantro if desired.
