Ingredients
✅ 1 tbsp oil
✅ 1 lb andouille sausage, sliced or diced
✅ 1 lb boneless, skinless chicken (breasts or thighs)
✅ 1 tsp Cajun seasoning
✅ 1 tbsp butter
✅ 1 cup onion, diced
✅ 1 cup celery, diced
✅ 1 cup bell pepper, diced
✅ 1 jalapeno, finely diced (optional)
✅ 4 cloves garlic, chopped
✅ 1 tsp ground cumin
✅ 1 tbsp Cajun seasoning
✅ 4 cups chicken broth
✅ 2 (14.5 oz) cans white beans, rinsed and drained
✅ ½ cup salsa verde
✅ ½ cup sour cream (or heavy cream/cream cheese)
✅ ¼ cup grated parmesan (or cotija)
✅ 1 tbsp lime juice (optional)
✅ 2 tbsp chopped cilantro or parsley (optional)
✅ 2 green onions, thinly sliced (optional)
✅ Salt & pepper to taste
Instructions
1️⃣ Heat oil in a large pot, cook sausage for 5-7 minutes, then set aside.
2️⃣ Season chicken with Cajun seasoning, cook until golden brown, then set aside.
3️⃣ Melt butter, add onion, celery, bell pepper, and jalapeno—cook for 7-10 minutes.
4️⃣ Stir in garlic, cumin, and Cajun seasoning, cook for 1 minute.
5️⃣ Add broth, beans, salsa verde, sausage, and chicken—bring to a boil. Simmer for 15 minutes.
6️⃣ Remove chicken, shred or slice, then return to pot.
7️⃣ Stir in sour cream and parmesan, let melt.
8️⃣ Finish with lime juice, cilantro, and green onions. Season with salt & pepper.
🔥 Slow Cooker Option: Do steps 1-4, then place everything (except sour cream and cheese) in a slow cooker. Cook on low for 6-10 hours or high for 2-4 hours. Finish with steps 6-8.
